washing your hair the day before and then immediately after should help with the sensory issues

I used to be a hairstylist, and they can absolutely work around sensory issues. You should be able to tell them your sensory issues, and a good stylist will do everything they can to help you work around it. If it's sensory issues with using clippers or trimmers, they can do a scissor cut. If it's with loose hairs, they can give you a shampoo after and make sure to dust all of the loose hairs off the back of your neck. Regardless, a good stylist will be willing to work with you on whatever sensory issues you may have. If they seem annoyed or frustrated, don't be afraid to ask for a different stylist. Thankfully those are very few and far between, so you should end up with an understanding stylist.
