I have a very restricted diet and I am fully willing to eat properly to maximize my health. However, because I have chronic fatigue and brain fog (at times due to fibro), I struggle regularly with meal planning and prep. Tried a food delivery service but they still included too many things I could not eat. How do you cope with eating well?

Sunbasket is an amazing food service. It has lots of meals with mostly organic indredients. And also has a a huge list of options that are pre/made and only need to be heated in the oven.

And dark chocolate— seems to have medicinal properties as well as being delicious!
I tried to keep healthy snacks around like nuts and sunflower seeds. Eating extra protein seems to help me, so I add protein powder or cottage cheese to smoothies. I also put protein powder on my cereal when I eat cereal.
Also I keep trail mix, healthyish chips, and water in my car to keep me from getting overly hungry.
I try to cook 2 meals a week that I can eat on for a while and get help with dishes and cleaning after.

On a good day you could make a few meals to freeze
I struggle with this too so I end up doing a ton of work on a "good day" and wiping myself out. But then I try to at least have some stuff in the freezer for harder days when I just can't. I haven't found a good balance. I might check out Hungry Root as @Invisible mentioned.

I can relate. Hungry root worked well for me.
I try to meal plan with very little involved. Pre-chopped veggies, frozen fish, deli meats, fresh veggies. Things that don’t take much time or energy to cook or prepare. And then it’s always good to have your go to back up store bought or prepared freezer meals and no cook no prep snacks for the days where all you can do is drag yourself out of bed to go to the bathroom & back.
