I also have been struggling with this lately. One thing that I do that might also help you is not eating 3 big meals a day but rather 4-5 smaller meals thoughout the day. Additionally only eating what I actually want to and not adding things I know I won't eat just to make it balanced. As they say for babies fed is best, that applies to adults too whatever you feel like you can eat is good as long as you have food in your body. And as you said in your second comment you got this! I'm so proud of you for doing what you can whilst respecting your body
