Starting the Nutritional Counseling Journey: Seeking Recommendations and Stories

Looking for recommendations/stories about starting the nutritional counseling journey. I’ve suffered from IBS and pelvic floor dysfunction for most of my young adult life. I went vegan about five years ago, and it has significantly helped with reducing inflammation. However, this has contributed to my B12 deficiency. I already do weekly injections and have issues with absorption. I feel confident that it’s time to loop in a nutritional counselor. It’s hard to know how to approach diet when eliminating or adding one group of foods could improve one condition but harm another. Are there resources you’d suggest in the interim?

It's hard to get B12 in if you're vegan. Sorry, it lives in livers and eating liver used to be the "cure". Sadly, livers are gross, and I can't absorb any B12 from eating. Have you tried supplements? I can't, but i do injected B12. I also add in these patches that give me transdermal B12. I know there's some leafy greens and some nuts maybe that have B12. If you're just low, some vegetables every day might be enough, if you have full blown pernicious anemia from it, then you need injections.
