This is odd to ask, but here we go. I met this guy, and we hit it off really wonderfully. the issue with this is that eventually, he wants to take things to a physical level (dating, touching, other things). but I tend to switch with another headmate when it happens. how do I tell him about this?

i'd say the first step is to gradually introduce him to your system, so that he understands it's not just you and that these things happen. once you are comfortable with taking things to the next level, setting boundaries is very important. alters should tell him if they switch in and you should discuss with him what to do if that happens. if he doesn't take this well and doesn't respect your boundaries, then he's not the guy for you.
