Trello is also a great source for organization, keeping track of assignments! And it’s free! U can make categories, like to do, complete, upcoming, and then add cards to those categories that have ur assignments. You can include deadlines, so you’ll see when something is overdue or reaching is deadline, and u can add colors to the cards to differentiate between different classes!
i don't like planners, but i like physically writing a list with pen and paper. i make a list each week, sectioned by each class, with what assignments i have to do that week with the due date written by it, and check them off once i'm done. i try to tackle a class a day if possible. i also make the list cute with doodles and stuff, that helps too! i have a little emotional support notebook that i keep track of everything in

I use a online planner/schedule, you should maybe try writing down the things you do in a daily basis, then put that into a schedule. If anything changes write that down and if the changes start to die off then disregard them and stick to your normal schedule.
Still trying to figure this one out, but taking lighter course loads and being open with professors has helped me a lot
