anyone have trouble eating healthy while dealing with fatigue or just not having the time to? I eat way too much packaged food. I enjoy eating healthy foods too, that part's not a struggle for me, but putting time and energy into cooking is hard.

I have a dietitian who has helped me a lot. I now cook on my days off and put everything in containers for the week ahead and just microwave the food. I also started using frozen veg because all I have to do is put them to boil or steam and I always have healthy snacks with me to avoid over eating on unhealthy ones, espcially when I am out of the house. It's not easy and sometimes on my days off I don't have the energy to cook at all, but I have a slow cooker and I find it easier to batch cook healthy meals with it as I don't have to keep an eye on the food. I find that having overnight oats in the morning for breakfast keeps me satisfied for longer, and I snack less.

I feel you there. I would always eat junk and fast food during my flares. I would crave McDonald's fries. I am currently doing the Whole 30 AIP diet at my doctor's recommendation. It cuts out all processed foods, added sugar, grains, dairy, soy, eggs, nuts, and seeds. It has been a steep learning curve. Meal prepping has made it easier for me to eat healthy on bad pain days. On my good days, I will make enough to cover me for 3-4 days. Crock pots are also very helpful since I have more energy in the morning.
