Anyone else ever meet someone, and just feel 95% certain they have ADHD and they say they don't? What do yall do?

I found that if they deny a suggestion like that, it's often because of stigma. They think they're Normal and their parents always said they were Normal, so why would something be wrong with them? It might sound silly, but along with suggesting therapy for diagnosis I would try to assure them that it isn't wrong or bad to have ADHD/get help for it.

Urge them to get evaluated! If they don't have adhd, no harm done. If they do, meds/therapy can help alot!
