So I really struggle with making meals for dinner due to lack of time and lots of stress. Does anyone have like an easy regular meal they like to make that I could try? I feel like we eat the same things every week I don’t know if that’s normal but I think we need more variety in our diet I just don’t have the mental space to research. Thank you 💕

      Cece: I regularly struggle with this issue — and don’t get me started on food shopping. Just thinking about grocery stores gives me anxiety. (Always been like this; I realized many family members are like this, too.) Anyway, my go-to is Cavatelli & Broccoli. Soooo easy & if you make 2 pkgs, you’ll have meals for 3 days! Place water & salt in a large pot, bring to a boil. Add frozen cavatelli once boiled, cook to directions (usually 5-7 min). Meanwhile, take 1/2 pkg of frozen CHOPPED broccoli (always the chopped!) & defrost in microwave. Then, 4 cloves of garlic through a press added into a large skillet with 5Tbs of oil. (More oil than you think is necessary.) Heat garlic in oil for 30 sec to bloom, then add in broccoli, salt & pepper — mix well & cook. Sauté for a few min on Med, then keep covered & on LOW until cavatelli is done. Drain, add to skillet, add more salt & pepper to taste & cook a few minutes more to incorporate. DONE! Quickest, tastiest meal & can be eaten hot or cold. 🤗 ENJOY!!

      Have you tried this: Sesame noodles (the Twisty kind) 1. Cook noodles 2. Straine noodles 3. Put one ts sesame oil 4. one TS peanut butter 5. one ts apple cider vinegar 6. Mix sesame oil, peanut butter, and apple cider vinegar together. 7. Put the mix in the noodles 8. Optional top with a half a ts of sesame seeds. That was in the college cook book. I hate vinegar but it actually taste good.

      I don't know about a recipe but I make crock pot meals and then I freeze individual meals from it to reheat later. Keeps me from cooking everyday.

      Quick question, are you into meal prep ? I used to cook multiple different plates and just store them for later use throughout the week.

      My go-to’s are fried eggs on toast, jarred soups, microwave popcorn (snack, not a meal), nut butter sandwiches, and pasta.

      My most recent easy meal is chicken Alfredo. Egg noodles, jar of Alfredo sauce, and canned chicken. Can't get easier than that, lol. I added shredded cheese in mine too (and milk if it's too thick) but that's literally it. Boil noodles, stir and heat the rest. Kids love it.

      I make two meals for a week. My favorite easy go to meals are Mediterranean Shrimp Sheet Pan, Chicken Spaghetti, and seafood Alfredo. If you send me a PM I can send you some of the recipes later today.

      Hobo rice; it's rice, meat (we use hotdogs), and vegetables (peas and carrots the cheap frozen set). You can make as much asyou want at once and eat it over a few days. It saved me when I got snowed in:) taste great too!

      On top of what you said, I hate to cook, it is thr biggest chore for me specifically. However I love casseroles cu, you csn make anything and make it different because of layers, throw it in to cook and your done. Prep all depends on what you do with the casserole

        @KittyRosa I’ve never made a casserole from scratch but when the Christmas market comes to town we have a vendor that sells pre-packages mixes (right portion of pasta, spices, dry stuff, etc) and tells you what else to add for wet ingredients and how to cook. I always love them and it’s really easy. I had to look them up to see if they’re coming back. PDQ Meals! Pre-packaged/portion/ready to make AND multiple servings is a life saver sometimes

          @_Aja_ oh how I wish I coukd use pre packaged delivery service. I feel like it would be so easy for me. I am too poor hahahaha. Prep time 100% make it so difficult for for to eat healthy. I make my own salads cuz I am picky with salad and all the chopping take forever I feel like I did an exercise by rhe time I am done 🤣

      I love an easy base with different sauces and fully cooked toppings that I can just microwave and add in. Ex: rice cooker, (yum yum sauce, soy sauce, teriyaki sauce, etc), (chicken, shrimp, turkey meatballs, cut up Hot Dogs if you’re weird like me). Or pasta. Cooking pasta doesn’t take long or they make minute microwave bags now that I always keep a stock of for emergencies. Serve with Alfredo, marinara, pesto, etc. You’ll probably use most of the same toppings. A crockpot may be useful. They make crockpot cook books and you could pick some that look good. I’m definitely getting one when I have the space! And, there’s nothing wrong with routine and eating the same things. As long as you’re having a nutritious day, I’d say you’re doing good! I definitely have go-tos and it makes grocery shopping much easier when I know exactly what I’m looking for lol!
