So um I just decided yesterday to go vegetarian... don't know if that means I'm doing good or I just need a good change and I can't afford to die my hair but I get food stamps. 😅😅😅 Amy advice for veginners lol?

      Let me start by saying I'm not vegetarian, but after I had Covid I got parosmia which made it impossible for me to eat meat for a while. 1.) If you like ramen, there's a high protein ramen called Vite Ramen. Don't get their flavored stuff, it's gross, but get the plain noodles and cook them with broth flavored however you like. 2.) Black beans and rice is amazing. You can load it full of so many toppings for variety, like a Qdoba or Chipotle bowl. Lots of protein, lots of fiber. 3.) If you're going vegetarian and not vegan, shakshuka is amazing. You can get jars of shakshuka sauce (I like the brand Mina), dump it in a skillet or microwave-safe bowl with two eggs, cover, and cook until the eggs are medium-ish. A little feta and cilantro on top is also delicious, but not required. 4.) When going to restaurants, Tex-Mex and Mediterranean will probably be your best bet for vegetarian options, because they have beans and lentils. The type of restaurant where you walk through a line and pick what you want buffet-style (like Qdoba, Cava, Chipotle, etc.) is also good. 5.) Google what vitamins it's hard to get as a vegetarian and prioritize those foods (or take supliments). 6.) Good luck!

      Cottage cheese and mushrooms are very versatile- and can be used instead of meat source. Look up Indian cuisine if you are spice tolerant- it has the most options for vegetarian meals.

      Before you find out the kind of vegetarian stuff that you like, I'd suggest getting things like protein meal bars, smoothies, etc so that you make sure you're eating enough. When I started being vegetarian years ago I wasn't getting enough vitamins and protein and ended up feeling dizzy often. So definitely make sure you get enough nutrients!! If you do make your own smoothies, adding things like peanut butter for protein or a vegan protein powder and dark leafy greens for iron (which you usually can't taste because of the fruit) will help you get back some of the stuff that vegetarians can miss from not eating meat. If you have salads try and go for spinach leaves rather than iceberg which is essentially just water, and you can use things like black beans or chickpeas instead of meat with whatever veggies you like. Chickpeas have really been a savior for my diet, they are a good source of protein and you can pretty much use them as a substitute in tons of meals and they're nice and cheap. A Lot of the plant based meat replacements can be pretty pricey so finding recipes with beans or chickpeas is a cheaper solution. Even just roasting chickpeas in the oven with a tiny bit of oil and some spices are a good snack, or you can add them to rice with veggies for a rice bowl. With my ADHD full blown meals can be too much so easy things like that are super nice. The cheap bags of rice you can microwave are a quick way to make it too if you don't have a rice cooker. Roasted chickpeas, peppers & onions with coriander and cumin overtop rice with a tiny bit of lemon juice and some tahini drizzled on top is one of my fav mediterranean-esque meals that only takes a little bit of effort and can be put in the fridge for leftovers the next day. Online recipes help even if it's just to get some ideas of ways to substitute things and once you find what you like you can usually figure out how to make any meal vegetarian. Good luck starting this!! ❤️ (Also if you can't commit to the vegetarianism right away, pescatarian might be a good start so that there are more options at places like restaurants or fast food)
